I have made these flatbreads many times from potatoes, but this time I had some extra sweet potatoes I wanted to put in use. You can make the flatbread from sweet potato puree as well.
2 dl sweet potato puree
2 1/2 dl wheat flour
If you don´t use the prepared sweet potato puree, peel the sweet potato and cook it throug in salted water. Mash the soft sweet potato into a puree with a fork, add a little boiling water if necessary and let the puree cool down. Carefully add the egg and flour to the puree. Do not knead the dough, or it will become too tough. Divide the dough into four parts and use flour to press 4 thin flatbreads onto the baking paper. Use a fork to punch holes in the surface and bake at 225 ° C for about 15 minutes.
