Lemon and poppyseed combination never failes. This time I used them in donuts. You need a donut pan for baking, but otherwise the recipe is very easy, just mix all ingredients and bake.
Ingredients
150 g greek yogurt
1 dl sugar
1 egg
1/2 juice of lemon
1 teaspoon poppy seed
3 dl wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 dl sunflower oil
Mix yogurt, sugar, egg, poppy seeds and lemon juice together. Mix flours with baking powder and baking soda and add carefully to the mixture. Finally add oil and stir.
Lightly grease a donut pan and fill to about half way.
Bake at 200 ° C for about 8 minutes and let cool before frosting.
Frosting
50 g butter
100 g white chocolate
1 tbsp lemon juice
1 dl icing sugar
yellow food color
white chocolate and poppy seeds for decoration
Add butter, white chocolate and lemon juice to the pan and melt slowly with mild heat. Add icing sugar and yellow color, mix until smooth. If the mixture feels too stiff, you can add a little water.
Decorate the donuts either by dipping them into the mixture, or piping directly over the donuts. I found the piping technique easier. Set donuts aside for about an hour and finish with stripes of melted white chocolate and poppy seeds.
