Hot summer doesn´t show any signs of cooling down, so using the oven is not really attempting. My icecream machine is also having a hard time in this heat, but luckily you can make ice cream in many ways. This recipe is super easy. Just mix three ingredients, freeze in molds and you can taste the tropic!
Personally, I´m not a big fan of coconut. I like it when it´s not too strong, that´s why this recipe has more pineapple juice. If you like stronger coconut taste, you can easily change the recipe by adding coconutmilk and reducing pineapple juice. Also the amount of rum extract can be changed by your taste.
Ingredients
2 dl coconut milk
3 dl pineapple juice
1/4 tsp rum extract
Mix the coconut milk, pineapple juice and rum extract evenly and pour the mixture into ice cream molds. Freeze the ice cream for about an hour and then add ice cream sticks. Put it back in the freezer and let freeze for a few hours or overnight.
